
Junichi Mitsubori
Grand Master of the Kado Ichika-ryu
Managing director of the Wagashi-tsukasa Izumiya
Director of the Japan Sweets Association.
Born as a third generation of the wagashi (Japanese traditional confectionary) store Izumiya in Yokosuka,
he has long engaged in wagashi making since his childhood.
Mitsubori first gained attention when he won TV's dessert
competition in 2010, and in 2016 .
Mitsubori founded his own school, named “Kado Ichika-ryu”.
Mitsubori's delicate yet dynamic wagashi and his style of
presentation spread awareness of wagashi to an international audience.
These days he is often invited to teach wagashi-making in Asian countries and does Kado performances all over the world.

Kado Ichika-Ryu
Kado is a new way of wagashi, which the ceremony of preparation is the essence of the art of presenting the host's spirit of hospitality to the guest.
Junichi Mitsubori founded his own school, Kado Ichika-ryu, through which he shares the culture of traditional.

Ichika-ryu uses bespoke utensils and calculated gestures.
By sublimating the mere edible confection into a refined work of art, it seeks to fascinate the eyes and stir the emotion.
Nerikiri is a prominent wagashi technique used in Kado, and one in which Mitsubori constantly explores enchanting possibilities.

2015
Launches photoblog Ichinichi Ichika̶Wagashi of the Day.
Introduces international workshops primarily in Asia.
2016
Appointed director of Japan Sweets Association
Founds Kado Ichika-ryu.
2017
Presents a Kado performance at the Sydney Opera House.
Becomes the first wagashi artist to exhibit at the Salon du Chocolat, in Paris.
2018
Publish first book "Kado ‒New Art of Wagashi-"
